Q: Can this motor handle and 8 cell lipo pack

A: This is the replacement motor for the E-flite Viper 90mm EDF Jet and is designated for 6S (22.2V) maximum.

Q: Can it run on 2 x 4 cell 5000 50C batteries series. It keeps overheating the battery and pulsating and sometimes totally shutting off.

A: Yes you can run two 4S batteries in parallel to share the load. The batteries should ideally be of the same brand, C-Rating and capacity.
The motors max voltage rating is 6S, so make sure to not connect your 4S batteries in series.
